Okay so when you say carrots, raisins, and pineapple what comes to mind? Yeah I know, not coleslaw but you have no idea how good this is until you try it. You're mind will be blown. I paired it with a sweet potato and it's insane. Like I could eat multiple servings insane.

Ingredients:
200g Sweet Potat110g
110g Shredded Carrot
20g Raisins
50g Chickpeas
16g Pineapple
5g Maple Syrup
30g Vegan Mayo
Vinegar (optional)
Instructions:
1) Preheat oven to 425C. Slice sweet potato hassleback style. Cook for 30-45 minutes until cooked.
2) Shred carrots, drain and rinse chickpeas, and dice pineapple into cubes.
3) Toss carrots, raisins, chickpeas, pineapple, maple syrup, and vegan mayo. You can add vinegar here if you want a little more kick.
4) Plate sweet potato, carrot coleslaw and ENJOY!
