For some reason I've always thought soup was so hard to make and little did I know that it's one of the easiest things you can do! You just throw everything in a pot, heat until cooked, and ta-da! You have a great soup. I've been experimenting with soup lately and one of my favorites so far is this carrot lentil soup. Seasoned with cumin and and curry powder, it's so good! Also, this soup is oil and salt free! #bonus This recipe makes 1 serving.

Ingredients:
97g Yellow Onion
6g Garlic
64g Carrots
67g Sweet Potato
99g Lentils (uncooked)
124g Canned Tomato (with the juice)
111g Vegetable Broth
60g Spinach
3g Cumin
3g Curry Powder
3g Dried Thyme
Instructions:
1) Chop onions, carrots, and sweet potato to your liking. Mince garlic.
2) Combine onions, carrots, sweet potato, garlic, and spices in a pot over medium heat. Stir until well combined and heat for 1-2 minutes.
3) Add in lentils, canned tomatoes, and veggie broth. Bring to a boil.
4) Once it begins to boil, lower heat, cover and let simmer for 10-15 minutes until lentils are cooked through, and carrots and sweet potatoes are soft.
5) Stir in spinach and let wilt. ENJOY!
