Sweet Potato Nutrient Bowl with Maple Dijon Dressing

Nutrient bowls are an easy way to meal prep and this sweet potato bowl is no exception. It's good warm or cold, sauced or un-sauced. This makes 1 serving!



Bowl Ingredients:

192g Sweet Potato

76g Mixed Beans (Canned)

7g Olive Oil

50g Broccoli

25g Corn

15g Red Onion (Diced)

60g Spinach

Garlic Powder

Onion Powder

Chili Powder


Bowl Instructions:

1) Preheat oven to 425°F.

2) Cut sweet potato into cubes and place onto baking sheet. Place in oven and cook for 15 minutes, toss and cook 15 minutes more or until tender.

3) Heat olive oil in pan. Add in beans and spices. Cook until beans have "popped".

4) Add broccoli and corn, cook until they begin to brown. Toss in the sweet potato.

5) Place spinach in bowl, add the veggie/bean mix. Top with red onion. Eat warm or cold.

Optional: Add the maple dijon dressing.

Maple Dijon Dressing Ingredients:

1 tsp Dijon Mustard

1.5 tsp Maple Syrup

0.5 tsp Garlic Powder

0.5 tbsp Olive Oil

0.5 tsp Vinegar (I used the Blue Sky Manitoba Oregano Vinegar)


Maple Dijon Dressing Instructions:

Combine all ingredients and whisk, shake, or stir. Enjoy!
